Upma dosa is a delicious South Indian fusion dish where crispy dosa is filled with soft upma. It is a wholesome and comforting breakfast or tiffin item that combines two classics into one!
For Dosa: 2 cups dosa batter Oil or ghee for roasting For Upma: ½ cup rava (semolina) 1¼ cups water 1 finely chopped onion 1 chopped green chilli 1 tsp mustard seeds 1 tsp urad dal 1 tsp chana dal A few curry leaves 1 tsp grated ginger 1 tbsp oil or ghee Salt to taste
Dry roast rava till aromatic and then set it aside.
Heat oil, splutter mustard, add dals, ginger, chilli, curry leaves, onion and sauté until it turns soft.
Add water, salt, once it boils, slowly add rava and stir to avoid lumps, cook until it becomes thick.
Heat the tawa, pour the dosa batter, spread it thin, drizzle oil, and cook until it becomes crisp.
Place 2 tbsp of upma in the centre, fold and serve hot
