Tehri is a quick meal loaded with vegetables and, thus, fibre. Prepared with rice, it is often accompanied by raita and tastes delicious. But if you want to make it protein-rich, add chicken to it. Here is how to make this rice-based delicacy.
2 bay leaves, onions 2 tbsp oil 1-inch cinnamon 2 cardamoms, cloves 750 grams of chicken 1.5 tbsp ginger-garlic paste Salt, pepper, water to taste ¼ tsp nutmeg powder 5-6 dried prunes ¼ cup curd 1 tsp sugar, turmeric 1.5 cup rice Vegetables of your choice ¼ tsp garam masala 2 green chillies 1 tsp coriander, chilli powder
Heat oil in a pan and saute whole spices. Add chicken, salt, onion, ginger-garlic paste and fry for 10 minutes.
Add prunes, nutmeg powder, sugar, and curd. Cook for another 4-5 minutes.
In a pressure cooker, saute onion, carrots, gobi, cabbage, peas, and other vegetables you like.
Add the remaining powdered spices and saute for another 3-4 minutes.
Add soaked rice, fried chicken, and water to the pan. Cook for two whistles.
Garnish the rice with coriander leaves and enjoy with raita.
