UP-Style Kaddu Sabzi: A Must-Try Pumpkin Recipe

In Uttar Pradesh and nearby regions, pumpkin is prepared with savoury and sweet notes. Kaddu ki sabzi graces the festive spread along with aloo sabzi, puri, and halwa. Here is how to make it.

Ingredients

1 tsp saunf 2 tsp mustard seeds ¼ tsp methi seeds 1-inch ginger Salt to taste 250g pumpkin 1 tbsp oil ¼ tsp coriander powder ½ tsp turmeric, mango powder ½ tsp red chilli powder 1 tbsp jaggery, coriander leaves 2 slit green chillies

Step 1

Heat oil in a kadhai and add mustard seeds, methi seeds, and ginger.

Step 2

Add diced pumpkin along with red chilli powder, green chillies, ginger, and turmeric powder.

Step 3

When kaddu softens a bit, add the remaining spiced powders and jaggery.

Step 4

Turn the flame low and cook until you can mash the pumpkin with the back of a spoon.

Step 5

Add fennel powder on top and garnish with coriander leaves.

Step 6

Enjoy kaddu ki sabzi with paratha or puri.
