In Uttar Pradesh, summers and monsoons are incomplete without bhindi coated in garlic masala. This dish is packed with earthy and spicy notes and goes well with freshly roasted parathas. Here is the recipe for you to try.
500g bhindi 2 onions 3-4 garlic cloves 1-inch ginger 1 tsp mustard seeds A pinch of fennel seeds A pinch of hing Salt to taste 1 tsp ajwain ½ tsp turmeric powder 2 green, red chillies 1 tsp coriander powder 1 tsp red chilli powder 1 tbsp mustard oil
Chop the okra and slice the onions.
Tempering hot oil with turmeric powder, ajwai, hing, and a pinch of fennel seeds.
Fold in bhindi and onions. Sprinkle salt and let the ingredients cook.
Meanwhile, pound mustard seeds, garlic, green chillies, ginger, red chillies, and mustard seeds
Add the remaining spice powders to the okra along with this garlic paste.
Serve the sabzi hot with freshly roasted parathas.
