3 large red carrots Extra virgin olive oil Fresh lemon juice Salt Cracked black pepper Optional toasted seeds or fresh herbs
Use a vegetable peeler to shave carrots into long, thin ribbons.
Place in a bowl and season lightly with salt.
Add lemon juice and olive oil and toss gently.
Finish with pepper and optional seeds or herbs just before serving.
