Fried rice is one of the best ways to utilise the leftover grains. It prevents wastage, and the dish is a treat for your senses. Moreover, it is healthier since it can include vegetables, seafood, and other sorts of protein. Try this recipe.

Ingredients

250 grams of basmati rice 1 cup sweet corn 6 garlic cloves 1-inch ginger 5 Thai chillies 4 onions 4 lime leaves 30 Thai pea eggplants 1 stock cube 3/4 cup coriander leaves

Step 1

Soak 250 grams of basmati rice for a few minutes. You can also use leftover rice.

Step 2

Cook the rice till almost done. Drain and keep aside. You can also refrigerate it.

Step 3

Heat some oil in a pan. Sauté the finely chopped ginger, garlic, and chillies until fragrant.

Step 4

Add the finely chopped onions and sauté lightly. Add the lime leaves, finely chopped coriander stems, and stir fry for a few seconds.

Step 5

Add the pea eggplants and stir-fry until slightly tender. Add the sweet corn and stir-fry. Mix in the crushed stock cube, salt, 1/4 cup of coriander leaves, and stir-fry until well combined.

Step 6

Add the cooked rice and mix everything well, ensuring the rice is evenly coated with the seasonings.
