There is a chill in the air, and a winter delicacy, one that everyone looks forward to, is gur ki kheer. The raw and smoky taste of the gur blends well with the rest of the ingredients, making it a dessert of a lifetime. If you’re craving this, here’s a simple and easy recipe to follow.
1 litre of full cream milk ¼ cup of basmati rice, small-grained ½ cup powdered jaggery ½ cup of chopped cashews, almonds and pistachios 1 tablespoon of raisins ¼ teaspoon of green cardamom powder
Wash the rice and set it aside. Warm up the milk in a large pot.
Pour in the rice, cardamom powder, chopped dry fruits and stir. Keep the heat to a medium flame. Add in the washed rice.
Keep stirring for 30 minutes. Make sure the rice does not stick to the surface.
Let the mixture become thick. Switch off the gas. Allow it to cool. Sprinkle with jaggery powder.
Keep it in the fridge. Serve it chilled after 3-5 hours.
