Aam Panna is a legendary defense against extreme heat and the "Loo" (hot summer winds). Made from roasted or boiled raw mangoes, this tangy tonic is packed with Vitamin C and essential electrolytes. The addition of black salt and roasted cumin makes it a potent digestive aid, helping to prevent heat exhaustion with a sharp, refreshing zing.
2 large raw mangoes 1/2 cup jaggery or sugar 1 tsp black salt (Kala Namak) 1 tsp roasted cumin powder Fresh mint leaves for blending
Pressure cook or boil the raw mangoes until they are soft. Once cooled, peel them and extract the thick pulp.
Blend the pulp with jaggery, black salt, cumin, and a handful of mint leaves until smooth.
To serve, add 2–3 tablespoons of this concentrate to a glass of chilled water.
Stir well, add plenty of ice, and garnish with extra mint for a classic summer hit.
