As the frosty tendrils of winter weave their way through our days, there's a comforting rhythm to be found in the kitchen. And what better way to embrace the season's chill than by embracing the verdant, versatile cruciferous hero: Broccoli.
3 potatoes, boiled and mashed ½ cup paneer, crumbled ½ cup cheese, grated ⅓ cup finely chopped onions 1-2 tsp finely chopped green chillies 2 tbsp coriander leaves 1 ½ tsp peri peri masala ½ tsp chaat masala ½ tsp Kashmiri red chilli powder ¾ tsp salt 1-2 tsp lemon juice 2 cups whole wheat flour 1 tsp oil ¾ cups water
Combine 2 cups wheat flour, ½ tsp salt, and 1 tsp oil. Gradually add water and knead into a soft, smooth dough.
Once ready, cover and let it rest for 15-20 minutes to allow the gluten to relax, which helps reduce tearing while rolling.
In a bowl, combine mashed potatoes, paneer, cheese, onion, green chillies, coriander leaves, peri peri masala, chaat masala, Kashmiri chilli powder, salt, and lemon juice.
Form equal-sized balls of dough and stuffing. The balls should be slightly smaller.
Repeat. Roll slowly from the centre outwards. Preheat a tawa till medium-hot.
Cook paratha till light spots show, then flip. Apply oil, butter, or ghee and cook until both sides turn golden brown. Serve!
