Apricot delight is a Hyderabadi tradition, widely respected in the community and saved for important occasions like weddings.
25 to 28 dried apricots or qubani, soaked 1 to 1.5 cups of strained water from the soaked apricots 2 to 3 teaspoons of sugar as required Sliced almonds, optional
Press the softened apricots with your fingers and remove the seeds.
Keep the hard kernels aside and break the kernels with a pestle or nutcracker. Keep the almond-like nuts aside.
Add a cup of strained water to the frying pan along with the chopped apricots.
Cook on a low flame for 20 to 25 minutes, stirring occasionally. Mash the apricots with a spoon. Add more water.
Add sugar according to taste and cook for 5 to 6 minutes more. Add the almond-like seeds of the apricots.
Mix, stir and serve either hot or cold.
