Pineapple beer (also known as Tepache) is a refreshing, naturally fermented beverage made from the peels and core of the fruit. This "zero-waste" drink relies on the natural yeast found on pineapple skin to create a mild effervescence and a complex, tangy sweetness. It’s an excellent non-alcoholic alternative to traditional beers, packed with enzymes that aid digestion and provide a tropical cooling effect.
Peels and core of 1 large, ripe pineapple (washed thoroughly) 1 cup piloncillo or dark brown sugar 2 cinnamon sticks 3–4 whole cloves 2 liters water
Dissolve the sugar in 2 liters of water in a large glass jar.
Add the pineapple peels, core, cinnamon sticks, and cloves to the water.
Cover the jar with a clean cheesecloth secured by a rubber band (to allow the brew to breathe).
Let it sit at room temperature in a dark spot for 24–48 hours.
Once small bubbles appear on the surface, strain the liquid into bottles and refrigerate. Serve cold over ice.
