Millet noodles are a modern, nutrient-dense alternative to traditional refined flour noodles, offering a wealth of minerals like magnesium and phosphorus. These noodles are naturally gluten-free and have a lower glycemic index, making them an excellent choice for sustained energy. Tossed with crunchy vegetables and a savory sauce, they provide a wholesome, fiber-rich meal that doesn't skimp on flavor.
1 pack millet noodles (Foxtail, Finger, or Little Millet) 1 cup mixed sliced vegetables (carrots, peppers, beans) 2 tablespoons soy sauce 1 tablespoon ginger-garlic paste 1 tablespoon sesame oil Spring onions for garnish
Boil the millet noodles in salted water until al dente, then drain and rinse with cold water.
Heat sesame oil in a wok and sauté the ginger-garlic paste and mixed vegetables on high heat.
Add the boiled noodles and soy sauce to the wok, tossing vigorously to coat every strand.
Garnish with chopped spring onions and serve hot.
