Sabakki idli is a delicious South Indian idli variation made from sabudana and curd, often consumed during fasting days. Here is a step-by-step recipe that is a must-try at home.
1 cup sabudana 1 cup idli rava 1 cup yoghurt Water as required 2-3 finely chopped green chillies 1 tsp grated ginger 2 tbsp chopped coriander leaves Salt to taste 1/2 tsp baking soda Oil or ghee for greasing
Wash and soak sabudana in water for 3-4 hours, or until it becomes soft.
Mix soaked sabudana, idli rava, curd, and add water for a thick consistency.
Stir chopped green chillies, grated ginger, coriander leaves, salt and let the batter rest for 30 minutes.
Just before steaming, mix the baking soda.
Grease moulds with oil or ghee, pour batter, and steam for 15 minutes.
Serve with hot sambar or chutney.
