Also dubbed ‘Oliver salad,’ the Russian salad has a dedicated fanbase. It was created by Lucien Oliver, a French-Belgian chef in Moscow, working at the Hermitage restaurant in the 1860s. The salad can be made with anything that you want in your bowl, but the mayonnaise is a must. So, you should try this at home instantly!
2 large carrots 3 big potatoes 2 cucumbers ½ cup of green peas 1 litre of water 1 and ½ teaspoons of salt 1 big apple ½ of a big pineapple ½ cup of mayonnaise 3 tablespoons of fresh cream 5 tablespoons of yoghurt 1 teaspoon of powdered sugar Pepper as per taste
Peel and dice carrots. Chop cucumbers, remove the seeds. Chop potatoes. Put it all in one bowl. Soak in water.
Strain the yoghurt. Keep it in the fridge to keep it cold.
Boil water. Add salt. Pour in the chopped veggies. Let them cook for 5-6 minutes.
Once the vegetables are cooked, set them aside to cool. Place them inside the fridge to keep it cold.
Chop the apple and pineapple. In another bowl, mix the mayonnaise, hung curd, cream, sugar, salt and pepper.
Add the vegetables and the fruit. Mix. Add more toppings as you like. Keep in the fridge for an hour.
Serve it cold, creamy and crunchy.
