The extremely hot mixed vegetable dish known as veg kolhapuri was developed to replicate the flavours of Kolhapur. It has spices, khade masala, and crunchy veggies to the very last bite. With winter and fresh vegetables available, here is a must-try recipe.
1 medium-sized potato 8-10 French beans ¼ cup of chopped cauliflower florets 2 carrots ¼ cup of fresh or frozen green peas 1 medium yellow or red bell pepper 1 tablespoon of green cardamom 1 tablespoon of black cardamom 1 teaspoon of mace powder 1 tablespoon of poppy seeds
1 teaspoon of cinnamon powder 1 teaspoon of fenugreek 2 - 3 red chillies 1 teaspoon of cumin powder 1 teaspoon of coriander powder 2-4 saffron strands Grated coconut, as needed 1 teaspoon of black pepper powder 1 teaspoon of sesame seeds Salt to taste Water as needed Cooking oil as needed
Pour water into a pot and steam the vegetables. Cover with a lid. Drain any water from the pan and set the steamed veggies aside.
Assemble all the powdered spices and whole spices needed to make Kolhapuri masala.
Heat a pan and dry roast the spices. Add poppy seeds, sesame seeds, and coconut after the spices are fragrant and lightly toasted.
Grind this into a fine powder in the mixer grinder.
In a pan, heat oil, fry the onions with salt and pepper and coriander. Add the rest of the spices. Add the masala. Stir well.
Add the vegetables and the water. Mix it well. Let it simmer. Serve veg kohlapuri.
