Street-style egg rolls are a popular Indian snack, featuring a paratha wrapped around a spiced omelette with onions, tomatoes, and chillies. Often garnished with ketchup or green chutney, these rolls are flavourful, convenient, and perfect for a quick, satisfying bite on the go.
4 large eggs 4 parathas (store-bought or homemade) 1 small onion 1 small tomato 1 small green chilli 1/4 cup chopped coriander leaves 1/2 tsp turmeric powder 1/2 tsp red chilli powder Salt 1 tbsp oil or butter
In a bowl, beat the eggs with salt, turmeric powder, and red chilli powder. Add the chopped onion, tomato, green chilli, and coriander leaves to the beaten eggs.
Heat a tawa and cook each paratha until light brown spots appear on both sides. Remove from heat and set aside.
Heat a little oil or butter in a non-stick pan over medium heat. Pour a portion of the egg mixture onto the pan, spreading it evenly to form a thin omelette.
Place a cooked paratha directly on top of the still-cooking egg mixture. Press down lightly so the egg adheres to the paratha.
Cook for another minute until the egg is fully cooked and adheres to the paratha. Flip if needed to ensure even cooking.
Remove the egg-covered paratha from the pan and place it on a flat surface. Add a line of ketchup or green chutney down the center of the egg side. Roll the paratha tightly around the filling, securing it with a toothpick if needed.
