Sevai upma is a light South Indian breakfast made with roasted vermicelli, vegetables, and mild spices. Quick to prepare and wholesome, it’s a comforting dish often enjoyed with chutney or pickle for a simple, satisfying meal.
1 cup roasted vermicelli (sevai) 1½ cups water 1 finely chopped onion 1 slit green chilli 1 finely chopped carrot ¼ cup green peas 1 tbsp oil or ghee ½ tsp mustard seeds ½ tsp urad dal A few curry leaves Salt to taste Fresh coriander leaves for garnish
Heat oil in a pan, add mustard seeds, and let them splutter.
Add urad dal, curry leaves, green chilli, onion and sauté till onions turn soft.
Add the chopped carrot and peas, cook for 2-3 minutes.
Pour water, add salt, and bring to a boil.
Add roasted vermicelli, stir well, and cook on low until water is absorbed.
Fluff gently, garnish with coriander, and serve hot.
