Ragda Patties is a popular street food in Mumbai and Gujarat. It is a crispy potato patty served with flavourful white peas and topped with tangy chutneys, onions and spices. Click here to find out an easy step-by-step recipe
For Ragda: 1 cup white peas (soaked overnight) ½ tsp turmeric powder To taste salt 3 cups water For Patties: 3-4 boiled potatoes 2 tbsp cornflour Salt to taste ½ tsp red chilli powder Oil as needed (for shallow frying) For Garnishing: ½ cup chopped onions ½ cup chopped tomatoes 2 tbsp chopped coriander 3-4 tbsp green chutney 3-4 tbsp tamarind chutney ¼ cup sev 1 tsp chaat masala
Pressure cook white peas with turmeric, salt, and water until soft then mash slightly and let it simmer.
Mash boiled potatoes, add cornflour, salt, chilli powder, shape into patties and fry until golden.
Place patties on a plate, pour ragda, add chutney, onions and tomatoes.
Garnish with sev, coriander, chaat masala, and serve hot.
