Kheer is a traditional Indian dessert that is popularly made during festivals, special occasions, and elaborate dinners. While it is usually made with rice, you can make kheer gluten-free with millets.
1 cup pearl millet (bajra) 2 cups milk 1/4 cup sugar 1/4 teaspoon cardamom powder 1/4 teaspoon saffron strands A pinch of nutmeg powder Ghee as required
Rinse the millet and soak for a few hours.
Heat some ghee in a pan and add the soaked millet. Keep stirring.
Pour in milk and let the kheer simmer till the mixture thickens.
Stir in sugar, cardamom powder, and saffron strands. Garnish with nuts and serve.
