Malai Ghevar is a Rajasthani delicacy made during the Hindu month of Shravan. It has a honeycomb-like texture and is made from ghee, maida, and sugar syrup. Click to find out about this traditional recipe.
For Ghevar: 1 cup maida 2 tbsp ghee 1/2 cup chilled milk 1/2 cup water (adjust as needed) Oil or ghee for frying 1 cup sugar 1/2 cup water (for sugar syrup) A few saffron strands For Malai Topping: 1L full-fat milk 2 tbsp sugar 1/4 tsp cardamom powder 1 tbsp finely chopped nuts (almonds, pistachios) A few saffron strands (optional)
Heat sugar and water to a one-thread consistency
Whisk the ghee, milk, flour, and water into a smooth and pourable mixture.
Pour the batter into hot oil, using a mould to create honeycomb disks, and fry until golden.
Boil milk in a heavy-bottomed pan, reduce to a simmer until it thickens, then add sugar, cardamom and saffron.
Soak ghevar in syrup and top it with malai and garnish with nuts.
