½ cup frozen green peas 1 tsp coriander powder 1 tsp garam masala ½ tsp amchur powder ¼ tsp red chilli powder Salt, as needed Oil, for deep-frying
Make the samosa dough by adding ajwain, salt, and flour to a large bowl. Pour oil and knead into stiff dough.
Let the dough rest for 40 minutes after covering it with a damp cloth. Start working on the filling.
Heat oil in a pan. Add cumin, fennel, and coriander seeds. Add hing, chopped green chilli, and minced ginger. Cook for a minute.
Add green peas along with mashed potatoes. Add coriander powder, garam masala, amchur, red chilli powder and salt.
After everything is thoroughly mixed, take the pan off the heat. Let it cool. Divide dough into equal portions. Cut one piece of dough into two equal pieces.
Add the filling in the middle, brush the edges of the dough with water, and wrap it up. Deep-fry all samosas.
Take two pavs, toast them with butter. Add green chutney and tamarind chutney. Place a samosa on top, drizzle with more chutney. Serve.
