Chicken roast, Kerala style, is a traditional dish from South India which perfectly pairs with rice, appam or roti. It is ideal for festive occasions or a hearty family meal and is a must-try to capture the essence of Kerala’s traditional flavours.
500 g bone-in cleaned chicken 2 tbsp coconut oil 2 thinly sliced onions 2 chopped tomatoes 2 tbsp ginger-garlic paste 2-3 slit green chilies ½ tsp turmeric powder 1 tbsp red chilli powder 1 tbsp coriander powder ½ tsp garam masala 1 tsp black pepper powder 1 sprig curry leaves 1 tbsp lemon juice Salt as required
Marinate chicken with turmeric, red chilli powder, salt and let it rest for 30 minutes.
Heat coconut oil, curry leaves, green chillies, sliced onions and sauté until it turns golden.
Add ginger garlic paste, tomatoes, coriander powder, garam masala, black pepper, salt and cook until the oil separates.
Add chicken, mix it with the masala, cover and cook it on low heat until tender.
Increase the flame and roast the chicken until caramelised.
