Banarasi Dum Aloo is a flavourful North Indian curry dish from Banaras. It’s a rich and creamy preparation made with baby potatoes and pairs perfectly with naan, paratha, or rice.
10–12 boiled and peeled baby potatoes 1 cup whisked yoghurt 1 finely chopped onion 2 pureed tomatoes 1 tsp ginger-garlic paste 2 tbsp cashew paste 1 tsp cumin seeds 1 tsp red chilli powder 1 tsp coriander powder ½ tsp garam masala ½ tsp fennel powder 1 bay leaf 2 cardamom pods 3 cloves 1-inch cinnamon stick 1 tsp kasuri methi 2 tbsp cream 3 tbsp oil Salt to taste Water as needed Fresh coriander leaves
Shallow fry the potatoes until they turn golden and set aside.
Heat oil, add cumin seeds, bay leaf, cardamom cloves, cinnamon, then saute the onions until they turn golden. Add some ginger garlic paste and cook.
Add tomato puree, cook until the oil separates, then mix cashew paste, spices, salt and stir well.
On low flame, add yoghurt, while stirring it and let it simmer for 5 minutes.
Add fried potatoes, cover and let it cook for 5 minutes, finishing it with kasturi methi, garam masala and cream.
Sprinkle some fresh coriander and serve with naan.
