Atukula Upma, also known as Poha Upma, is a quick-to-prepare and nutritious South Indian breakfast delight. The dish is made with flattened rice and curry leaves and can be had with podi or chutney on the side.
1 cup thick poha (flattened rice) 1 finely chopped onion 1 chopped green chilli 1/4 cup vegetables 1/2 tsp mustard seeds 1/2 tsp cumin seeds 1/4 tsp turmeric powder 2 tbsp peanuts or cashews 1 tbsp oil or ghee Few curry leaves 1 tbsp chopped coriander leaves 1/2 lemon juice Salt, to taste
Rinse and drain 1 cup of poha, then set it aside.
Heat oil, splutter mustard seeds, add cumin, curry leaves and peanuts.
Sauté chopped onions, chillies, and veggies until they become soft.
Add turmeric, salt, poha, mix well and cook for 2-3 minutes.
Turn off the heat, add lemon juice, garnish with coriander and serve hot!
