A creamy pina colada cocktail is a great recipe to have handy while unwinding for the weekend or hosting loved ones for a meal. Lush with the flavours of coconut and pineapple, the white rum can also be swapped for coconut rum to make a delicious and sweet concoction.
60 ml pineapple juice 30 ml coconut cream 45 ml white rum 25 ml lime juice Pineapple wedge, for garnish
Combine the pineapple juice, coconut cream, rum and lime juice in a shaker filled with ice.
Shake thoroughly for 15-20 seconds before straining into a tall hurricane glass.
Garnish with a wedge of fresh or grilled pineapple and serve immediately with a cocktail umbrella for visual appeal.
