Preparing this classic farsan is often considered a test of precision in a home kitchen, as it requires transforming a simple mixture of gram flour and yogurt into a smooth, glossy batter that sets into delicate, melt-in-the-mouth rolls. Avoiding lumps and managing the heat just right are the secrets to achieving that iconic silky consistency without splitting the delicate sheets.
1 cup besan (gram flour)  1 cup plain yogurt (curd), beaten smooth  2 cups water  1/2 teaspoon turmeric powder  1 teaspoon ginger-green chilli paste  Salt to taste  2 tablespoons vegetable oil  1 teaspoon mustard seeds  A few fresh curry leaves and green chillies for tempering
Whisk the besan, beaten yogurt, water, turmeric powder, ginger-green chilli paste, and salt together in a heavy-bottomed pan until completely smooth and free of lumps.
Cook the mixture over medium-low heat, stirring continuously with a flat spatula to prevent burning, until the batter thickens into a glossy, spreadable paste.
Spread thin, even layers of the hot batter rapidly across the smooth back of inverted steel plates or a clean kitchen counter, then let them cool for a few minutes.
Cut the set sheets into long strips, roll them up neatly, arrange them on a serving plate, and top with a sizzling tempering of mustard seeds, curry leaves, and fresh grated coconut.
