Khaman Dhokla is a soft, spongy, and savoury steamed snack made from gram flour, popular in Gujarat. Light and fluffy, it's seasoned with mustard seeds, green chillies, and curry leaves, often served with tangy chutney, making it a perfect tea-time treat
1 cup besan (gram flour) 1/2 cup yoghurt 1/4 cup water 1 tsp ginger-green chilli paste 1/2 tsp turmeric powder 1 tsp eno fruit salt (or baking soda) Salt dipping sauce
1 tbsp sugar 1 tbsp oil 1/2 tsp mustard seeds 1-2 green chillies A few curry leaves 1 tbsp fresh coriander
In a bowl, mix besan, yoghurt, water, ginger-green chilli paste, turmeric, sugar, and salt. Whisk well to form a smooth batter. The consistency should be similar to pancake batter.
Just before steaming, add eno fruit salt and mix gently. The batter will become frothy.
Grease a steaming dish or plate and pour the batter into it. Steam the batter for 15-20 minutes or until a toothpick inserted comes out clean.
In a small pan, heat oil and add mustard seeds. Once they splutter, add slit green chilies and curry leaves. Pour this tempering over the steamed dhokla.
Garnish with fresh coriander and serve hot with chutney. Enjoy your soft and spongy Khaman Dhokla.
