Gulab pak is a traditional Gujarati dessert made with khoya and organic rose petals. Here’s a recipe for beginners who want to make it.
1 cup mawa or khoya 1 cup dried rose petals ½ cup milk ¼ cup semolina or rava ½ cup sugar 1 cup pistachios, almonds and cashews, slivered ½ tsp cardamom powder 4 tbsp ghee
Roast the semolina. Pour about 3 tbsp of ghee into a nonstick pan. Once hot, add the rava and whisk constantly on a low flame.
Once fragrant, transfer to a dish. In the same pan, combine the milk and sugar.
Stir regularly to ensure that the sugar dissolves completely, and allow it to thicken and become sticky over low heat.
Add khoya to it. Stir until it is soft and well integrated into the milk sugar mixture.
Add the roasted sooji and stir thoroughly. Add dry rose petals, chopped dried fruits, and cardamom powder. Mix thoroughly.
Turn the flame off and set it aside. Grease a thali with ghee and pour in the ready-made gulab pak mixture.
Allow to set for 2 to 3 hours. Remove and cut into pieces. Garnish with slivered kaju, badam, and fresh or dried rose petals!
