Dry fruit gajak is a classic winter sweet made with jaggery and a generous mix of roasted nuts. Crunchy, naturally sweet, and packed with energy, it’s a traditional cold-season treat that brings warmth, nourishment, and nostalgia to every bite.
½ cup mixed dry fruits (almonds, cashews, pistachios) ½ cup peanuts ¾ cup crushed jaggery 1 tbsp ghee ¼ tsp cardamom powder
Dry roast peanuts and dry fruits separately, then coarsely crush them.
Heat ghee in a pan, add jaggery, and melt it on a low flame till bubbly.
Add cardamom powder and quickly mix in all roasted nuts.
Stir well and transfer immediately onto a greased parchment or plate.
Roll thin while warm, cut into pieces, and let it cool to set fully.
