Colostrum pudding, known regionally as junnu or kharvas, is a traditional dessert made using the first milk produced after a cow gives birth. This milk is naturally high in protein, fats and antibodies, which gives the pudding its dense, custard-like texture when steamed. It has been prepared in rural households for generations and is valued both for its nutritional richness and its delicate flavour.
1 cup colostrum milk ½ cup regular milk 3–4 tablespoons jaggery or sugar ¼ teaspoon cardamom powder A few saffron strands optional
Mix colostrum and regular milk thoroughly to create an even base.
Dissolve jaggery separately if using, then strain into the mixture to remove impurities.
Add cardamom and saffron, then pour into a greased steaming dish.
Steam on low heat for 20–30 minutes until just set, avoiding high heat to prevent splitting.
Allow it to cool completely before slicing so the texture firms up properly.
