Traditional Chiblu Idli With Jackfruit Infused Flavours

Chiblu idli originated in Karnataka, it has a unique earthy flavour infused by jackfruit leaves, whose subtle aroma enhances the idlis’ natural taste. It is soft, fluffy, and beautifully pairs with the coconut chutney of sambar.

Ingredients

1 cup raw rice (soaked for 4-5 hours) 1/2 cup grated coconut 1/2 tsp salt 10-12 jackfruit leaves (chiblu) Toothpicks (for folding leaves)

Step 1

Grind soaked rice with grated coconut and a little water to form a thick smooth batter, add salt and mix it well.

Step 2

Fold jackfruit leaves in cone shapes and secure using toothpicks.

Step 3

Pour the batter into leaf cones, filling them 3/4th full, allow some space to rise.

Step 4

Put the cones in a steamer for 15-20 minutes until cooked.

Step 5

Remove the toothpicks, peel off the leaves and serve with chutney.
