Bihar's all-time favourite dessert is pua. Traditionally, wheat flour is used to prepare it. Mango pickle is typically served alongside it!
2 cups of wheat flour ½ cup milk ½ cup sugar 2-3 tablespoons of grated coconut ½ tablespoon of fennel seeds Oil for frying Water, if needed
In a mixing bowl, add the wheat flour and sugar first. Give it a few gentle mixes.
Slowly, pour the milk into the mix. Give it a few stirs.
Leave it to ferment for 4-5 hours. Add grated coconut and crushed fennel seeds.
Heat oil in a deep pot. Take a ladle and scoop a spoonful of the batter, and gently place it into the oil.
Fry until golden on medium heat. Pua is supposed to be a little thicker than usual.
Repeat until you’ve used up all the batter. Drain out the oil. Let it cool or serve immediately.
Pua can also be made with stuffing. For this, you can use coagulated sugar or dry fruits.
