Achu murukku is a crispy, flower-shaped South Indian snack made during festivals. Lightly sweet and flavoured with cardamom, it's prepared using a special mould and a batter of rice flour, maida, sugar, and coconut milk.
1 cup rice flour ¼ cup maida ½ cup powdered sugar ½ to ¾ cup coconut milk 1 egg (optional) ½ tsp cardamom powder 1 tbsp sesame seeds (optional) Pinch of salt Oil (for frying) Achu murukku mould
Mix rice flour, maida, sugar, cardamom, salt, sesame seeds, egg, add coconut milk gradually to form a smooth batter.
Heat the oil and immerse the mould until hot.
Dip the mould halfway into the batter, then place it in the oil.
Shake gently to release the cookie into the oil.
Fry until it turns golden, then let it cool and store.
