Gulgule are traditional North Indian sweet fritters made from wheat flour and jaggery. Soft inside and crisp outside, they make a nostalgic tea-time snack, especially during festive seasons like Diwali.
1 cup whole wheat flour ½ cup grated sugar ¼ tsp cardamom powder 1 ripe banana (optional for softness) ½ tsp fennel seeds (saunf) Water as needed Oil for frying
Dissolve sugar in warm water and strain to remove impurities.
Add wheat flour, cardamom, fennel, and mashed banana (if using) to form a thick batter.
Heat oil in a kadhai over medium flame.
Drop a spoonful of batter into hot oil and fry until golden brown.
Drain on tissue paper and serve warm, best enjoyed with chai!
