Panakam is a traditional South Indian summer drink that is prepared by blending jaggery, spices, and lemon. It is naturally cooling in nature, quick to make, and perfect for hot summer days when your body demands something refreshing and hydrating, other than just a glass of water.

Ingredients

2 cups water 3 tablespoons powdered jaggery 1 tablespoon lemon juice ½ teaspoon dry ginger powder ¼ teaspoon black pepper powder 2–3 crushed cardamom pods A pinch of salt

Step 1

In a vessel, take water and add powdered jaggery to it until it dissolves fully. Strain if required to remove any impurities to get a smoother drink.

Step 2

To this, pour in fresh lemon juice and stir lightly. This will give a slight tang that will perfectly balance the sweetness and make the drink more refreshing.

Step 3

Now, add dry ginger powder to the mixture; this will give a warm, spicy note and also help in digestion.

Step 4

Sprinkle black pepper powder and crushed cardamom from the top to enhance the flavour of the drink.

Step 5

Add a small pinch of salt and mix it well. You can also taste and adjust as per requirement.

Step 6

Keep the drink in the refrigerator and let it rest for a few minutes. Serve the cool pannakkam for the best taste.
