Tomato Rice is a popular South Indian dish prepared with cooked rice, fresh tomatoes, and aromatic spices. It is tangy, mildly spiced, and makes a comforting one-pot meal for lunch or dinner.
2 cups cooked rice 2 large tomatoes (chopped) 1 onion (sliced) 2 green chillies (slit) 1 tsp ginger-garlic paste ½ tsp mustard seeds ½ tsp cumin seeds 1 sprig curry leaves ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp sambar powder or garam masala 2 tbsp oil Salt to taste Fresh coriander leaves (chopped, for garnish)
Heat oil in a pan, add mustard seeds, cumin seeds, curry leaves, and green chillies.
Add onion and sauté until golden, then stir in ginger-garlic paste.
Add chopped tomatoes, turmeric, red chilli powder, and sambar powder, cook until soft.
Mix in cooked rice, season with salt, and stir well. Garnish with coriander leaves and serve hot with papad or pickle.
