Tomato Kurma is a flavourful South Indian curry that is easy to make and the most comforting dish, burst with bold flavours. It is made with tomatoes and spiced coconut fennel seeds. The dish perfectly pairs with idlis, dosas and even chapatis.
3 chopped tomatoes 1 chopped onion 1/4 cup grated coconut 1 tsp fennel seeds 2 cloves garlic 1 small piece ginger 2 green chillies 1/4 tsp turmeric powder 1 tsp red chilli powder 1/2 tsp garam masala 2 tbsp oil 1 tsp mustard seeds A few curry leaves Salt to taste 1/2 cup water A handful coriander leaves
Grind coconut, fennel seeds, garlic, ginger and green chillies to form a paste.
Sauté mustard seeds, curry leaves and onions in oil.
Add chopped tomatoes, turmeric, chilli powder, and salt and cook until they turn soft.
Stir the coconut paste, water and garam masala together and simmer until the gravy gets thick.
Serve hot with idli, dosa and chapati!
