A good chicken biryani is all about having a perfect balance of fragrant rice, soft meat, and layering of flavour. With a few smart tips, you can make a perfect chicken biryani at home for Eid without overcomplicating the process.

Step 1

Always marinate the chicken for at least an hour or two. This softens the meat nicely, and you get that juicy taste in every bite.

Step 2

Soak the basmati rice before cooking for at least 30 minutes, and then boil until 70%. This will prevent the rice from overcooking when you mix everything.

Step 3

Fry onions with patience until they turn golden brown. If you rush on this step, it affects flavour, as these fried onions add sweetness, colour, and depth to the chicken biryani.

Step 4

Cook chicken masala until you see the oil has separated clearly. A thick, well-cooked base does not have excess moisture and prevents the biryani from turning soggy after layering.

Step 5

Layer rice and chicken evenly, and add saffron milk and ghee in between the layers. This will let the flavours spread properly and create that classic biryani aroma.

Step 6

After dum cooking and opening it, always let the biryani rest for some time. This last and final step lets the steam settle, keeping the rice firm and spices well soaked.
