Til gud barfi is a classic winter indulgence prepared with sesame seeds and jaggery. This simple, homemade sweet is ideal for guilt-free winter snacking when you crave something sweet but without worrying about extra calories.
1 cup white sesame seeds (til) ¾ cup grated jaggery (gud) 2 tbsp ghee ¼ tsp cardamom powder Chopped nuts (almonds/pistachios) Water (if needed for syrup)
On a low flame, dry roast sesame seeds until they turn aromatic and lightly golden. Stir it constantly to avoid burning.
In a mixer, grind the roasted sesame seeds for a few seconds until they turn into a coarse powder. This helps bind the barfi while maintaining its nutty texture.
In a pan, heat the ghee and add the grated jaggery. Cook on low flame until it melts and starts bubbling, making a thick, sticky syrup.
Add cardamom powder and chopped nuts. Stir quickly so that flavours infuse evenly in the hot jaggery mixture.
Add the ground sesame to the jaggery syrup and mix rapidly after removing it from the heat, until everything forms a thick, dough-like mixture that sticks together.
On a greased tray, spread the mixture and press evenly. Let it cool for some time and then cut into squares or a diamond shape.
