Til barfi is a winter indulgence that has a nutty taste of sesame seeds wrapped with sweetness and warmth. This easy-to-make barfi feels festive and is perfect for seasonal celebrations.
1 cup white sesame seeds (til) ¾ cup sugar ¼ cup water 2 tbsp ghee ¼ tsp cardamom powder 2 tbsp chopped almonds or pistachios
Dry roast the sesame seeds on low heat, stirring them constantly until they are fragrant and lightly golden.
Let the roasted sesame cool a bit, then grind them to make a coarse powder to let the mixture bind while maintaining texture.
In a pan, boil sugar and water until a one-string consistency forms, i.e., sticky but gliding smoothly between fingers.
Add ghee, sesame powder, and cardamom to the syrup, and stir continuously until the mixture thickens evenly without any lumps.
Pour the hot mixture into a greased tray or plate, spread it evenly, and sprinkle the chopped nuts on it.
Let the mixture cool down and set completely, then cut it into barfi squares. Store in an airtight container and enjoy throughout the winter season.
