Summer season demands for sweet mango pickles that offers as beloved condiment in many Indian households. It offers a burst of flavour and it is an enjoyable dish that is enjoyed by adults and kids alike. Take a look at the recipe here:
2 large raw mangoes 1 cup sugar 1/4 cup salt 2 tablespoons red chilli powder 1 tablespoon turmeric powder 1 tablespoon mustard seeds 1 teaspoon fenugreek seeds 1/2 teaspoon asafoetida (hing) 1/2 cup oil (preferably mustard oil)
Wash the mangoes thoroughly, peel, and cut them into small cubes. Remove the seeds.
In a large bowl, mix the mango cubes with salt and turmeric powder. Let it sit for 2 hours to release moisture. Drain the excess liquid.
In a pan, dry roast mustard and fenugreek seeds until aromatic. Grind them into a coarse powder.
Heat oil in the pan until it smokes. Allow it to cool slightly. Add asafoetida, red chilli powder, and the roasted spice powder. Stir well.
Add the mango cubes and sugar to the pan. Mix thoroughly to coat the mango pieces with the spicy oil mixture.
Transfer the mixture to a clean, dry jar. Seal tightly and let it sit in sunlight for about a week, shaking the jar daily to ensure even marination.
