A good sandwich chutney has the ability to totally change the taste of a simple sandwich. This fresh, green chutney is quick to make, full of flavours, and gives a spicy, tangy zing to every bite.
1 cup fresh coriander leaves ½ cup mint leaves 2 green chillies 2 tbsp roasted peanuts or chana dal 1 tbsp lemon juice 1–2 tbsp water Salt to taste
Thoroughly wash coriander and mint leaves to remove the dirt, then drain completely.
Roughly chop the coriander, mint, and green chillies, as it will help them blend more evenly.
In a mixer jar, add the chopped herbs, green chillies, and roasted peanuts or chana dal.
Now, add salt and lemon juice, then blend everything. Add a little water slowly to get a smooth, spreadable consistency without making it too thin.
Taste and adjust seasoning if required. You can add more lemon juice for tang or chilli for extra spice, as per your preference.
Transfer this chutney to a clean jar and use it instantly or refrigerate it.
