The pasta salad is a timeless classic that has long been savoured across Europe as a delicious meal. From its versatility to its satisfying taste, pasta has proven time and time again to be a wonderful ingredient for salads. 1 packet of cooked radiotori pasta 1 ½ cups of pesto sauce ½ cup of mayonnaise ½ cup sun-dried tomatoes, cut into halves 2 cups of baby arugula 10 chopped kalamata olives ½ cup cooked white beans Shredded chicken, optional Lemon zest, for garnish Salt & pepper, to taste
Follow the directions on the package to cook the radiatori pasta. After thorough draining, allow it to cool fully.
Mix the mayonnaise and pesto sauce in a big bowl until completely combined and smooth.
After the pasta has cooled, add it to the bowl and toss to coat every piece.
Add the cooked white beans, chopped kalamata olives, baby rocket and sun-dried tomatoes and gently fold.
Add the shredded chicken, if using, and gently stir.
Add salt and pepper to taste.
Just before serving, add some fresh lemon zest on top. Serve pasta salad!
