This One-Pot Broccoli Almond Soup Is About To Be Your Winter Obsession

A very healthy and comforting soup made from broccoli and flavoured with garlic and almonds. This is a mildly flavoured soup that tastes amazing with the addition of just salt and pepper.

Ingredients

250 grams of broccoli 10-12 almonds Butter as needed 1 green chilli, chopped 1 medium-sized onion, chopped 2-4 garlic cloves 1 tablespoon of maida Water as needed 1 cup of warm milk Salt to taste Pepper powder as needed

Step 1

Blanch and peel the almonds. Set it aside. Chop the broccoli and set it aside. In a pan, heat some oil.

Step 2

Add the butter, onion, garlic cloves and green chilli. Sauté until the chilli is soft.

Step 3

Add the chopped broccoli. Sauté for 1 minute.

Step 4

Add the maida. Stir the mixture. Pour the water. Cook until broccoli is tender.

Step 5

Add in the almonds. Cover with a lid. Turn the heat to low flame. Cook it for 5 minutes more.

Step 6

Switch off the heat. Pour the mixture into a blender. Grind it into a paste.

Step 7

In a pot, pour in the milk. Then add the paste and bring it to a simmer.  Season with salt and pepper. Serve!
