Made with thickened milk, rabdi is a rich Indian dessert that is often paired with sweets like jalebi, malpua, or even falooda. To give it a summer spin, try this mango rabdi and elevate your favourite desserts.
1 litre of full-cream milk 2 raw mangoes 2 tablespoons sugar ¼ teaspoon cardamom powder 2 tablespoons chopped nuts Chopped mango (for garnish)
Heat the milk and simmer, stirring constantly, until it reduces to about 1/3 of its original volume.
Once the milk is thickened, add sugar, cardamom powder, and chopped nuts.
After you get the desired consistency, remove the heat and let the rabdi cool.
Blend raw mangoes to make a puree and fold it into the rabdi.
Refrigerate for at least 2 hours, garnish with chopped mango pieces, and serve.
