Give your regular classic rawa halwa a healthier twist by adding jaggery in place of sugar. This halwa can be made in minutes; this comforting dessert is perfect for festive offerings or when you want to satisfy your sweet cravings without any guilt afterwards.

Ingredients

1 cup fine semolina (rawa/sooji) ¾ cup grated jaggery 2½ cups water ¼ cup ghee ½ tsp green cardamom powder 10 cashews 10 almonds, sliced 1 tbsp raisins A few saffron strands (optional))

Step 1

In a pan, heat ghee and then roast the rawa over low flame until you get a nutty aroma and it turns a bit golden. Once done, keep this aside.

Step 2

In the same pan, warm some water and add the grated jaggery and dissolve it. Strain the jaggery syrup if needed so that the impurities, if any, are removed.

Step 3

Now, add the prepared jaggery syrup to the roasted rawa and keep stirring it constantly. Cook this until you see the mixture has thickened.

Step 4

To this, blend in some cardamom powder, saffron, chopped cashews, almonds, and some raisins. Mix everything nicely so the nuts get evenly scattered.

Step 5

Cook it for another 2–3 minutes until you see the glossy texture. Serve this warm as a delightful sweet.
