Malpua resembles pancakes; it is crispy, soaked in sugar syrup, and flavourful. It is a popular Maharashtrian delicacy often enjoyed during festivals like Holi and Ganesh Chaturthi. This is your guide to make it at home.
1 tsp saunf 1.25 cup maida ¼ cup water 1.5 cups milk ½ tsp cardamoms 3-4 tbsp ghee ½ cup sugar 2 tsp lemon juice 3 tbsp milk
Mix mawa or milk powder and milk in a bowl, and mix them.
Add cardamom powder and fennel seeds. Make sure the consistency of the batter is thick but flowy.
Keep the batter aside and prepare sugar syrup. Lemon juice to prevent crystallisation.
Heat ghee in a pan, and pour a small amount of batter.
Cook both sides of the pua and immerse it in sugar syrup.
Top the malpua with chopped nuts, rose petals, and cardamom powder. Enjoy!
