Blending fibre-rich oats and nutrient-dense flax seeds into a fine powder yields a rustic, robust foundation that will keep you satisfied for hours.
2 medium eggs 420g Greek yoghurt 3 tbsp extra virgin olive oil 1 ⅓ cup oats ¼ cup flax seeds 3 tsp baking powder ¾ tsp salt Egg wash, as needed Flax seeds and oats, for garnish
In a large mixing bowl, whisk together the eggs, Greek yoghurt and extra virgin olive oil until smooth and well blended.
Combine the oats and flax seeds in a food processor. Blend at high speed until the mixture resembles fine flour.
Add the baking powder, salt and ground oat and flax combination in two separate additions to the bowl containing the wet ingredients.
Stir thoroughly after each addition until the batter is medium-thick and there are no dry pockets.
Place the batter in a greased and parchment-lined loaf pan (1 kg-2 lb). Smooth the top and brush with the egg wash.
Cut a line along the middle with a greased knife. Sprinkle more oats and flax seeds on top for decoration and crunch.
Bake in a preheated oven at 180°C for 35 minutes until the top is golden brown. Let it cool. Remove and cut into bread slices.
