Pastas can absorb flavours really well. Any sauce or herbs you use make the pasta taste delicious. A pesto sauce infused with basil, walnuts instead of the traditional pine nuts and olive oil, when cooked with pasta, is light, fresh on the palate as well. Here’s a step-by-step recipe for the same.
3 cups of basil leaves ½ cup of chopped 4 garlic cloves A few crushed walnuts ¼ cup of Parmesan cheese, grated 1 cup of olive oil
Wash and pat dry the basil leaves thoroughly to remove any dirt or moisture that could affect the texture of your pesto.
Place the basil leaves, chopped walnuts, and garlic cloves into a food processor or blender.
Pulse several times until the ingredients are finely chopped, but not completely smooth.
Gradually pour in the olive oil while blending, allowing the mixture to emulsify into a creamy consistency.
Add the grated Parmesan cheese and continue blending until fully combined and smooth.
Taste the pesto and adjust seasoning with a little salt or more cheese if desired.
Transfer the pesto to a clean jar, drizzle a small amount of olive oil on top, and store in the refrigerator.
