Dahi sandwich is one of the easiest summer breakfasts that feels light on the stomach when the heat feels intense and is filling. Prepared by mixing fresh vegetables in creamy hung curd, it works perfectly for the rushed weekday mornings or as an easy no-cook snack.
4 bread slices 1 cup hung curd ¼ cup grated carrot ¼ cup chopped cucumber 2 tbsp chopped capsicum 1 tbsp chopped coriander ½ tsp black pepper ½ tsp roasted cumin powder Salt as required 1 tsp green chutney Butter for toasting
In a bowl, take the prepared thick hung curd and add salt, black pepper and roasted cumin to it.
To this, mix the chopped cucumber, carrot, capsicum and coriander to make a flavourful filling.
Take a bread slice and apply a thin layer of green chutney on it before applying the layer of filling.
Spread the prepared dahi mixture evenly on the bread slice and press it lightly so that the filling remains intact while slicing or grilling.
Apply a little butter outside the bread slice and toast it in a pan until it turns lightly golden.
Cut the sandwich into two equal parts and serve instantly with extra chutney, ketchup or over a cup of masala chai.
